Pancakes with Quinoa Flakes

Sounds healthier than it tastes :)


Quinoa Flakes are by far my new favorite baking supply. I love the protein, the little ones don't seem to notice, and it's a great wheat free alternative to bran. Look for them in the hot cereal section of your market- natural foods stores will have them for sure. (Note, don't use quinoa seeds in this recipe look for the flakes)


1 cup gluten free flour mix + 1/2 tsp xanthum gum OR
1 cup wheat flour

1/2 cup quinoa flakes
3 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tbsp sugar

Whisk dry ingredients together, add:

1 egg, beaten
4 tbsp oil (or melted butter)
1 1/4 cups milk or non-dairy alternative (i'm a fan of almond milk)


Heat skillet and cook away. I make mine a little small 1-2 inches. The batter will seem runny but it cooks up well.



As of this post, my little man is six small pancakes into his breakfast...
