Joe's Coconut Almond Granola with Chocolate

It's taken me... well... 4 years I think to make a granola suitable to my husbands liking. At least one that competes with what you find at the Golden Farmers Market in the summer. I thought I'd share the recipe that has won over his heart. Note it does not have much in the way of nuts- please feel free to add your favorites. Sunflower seeds, pumpkin seeds, walnuts are all great additions :)

Joe says this is best mixed with cold cereal in the morning. I think it's amazing with a little bit of steamed milk in the afternoon. Either way, make up a big batch, keep it in an airtight container and enjoy!

Preheat oven to 215 degrees.

4 cups rolled oats
1/2 cup brown sugar
1/4 cup oil (sunflower is our favorite but any will do)
1/4 cup honey
3/4 cup coconut flakes
3/4-1 cup slivered almonds
1 tbsp unsulphured molasses
1 tsp (ish) salt
1 tbsp ground cinnamon

1/2 cup (or more depending on taste) chocolate chips

Mix in a large bowl until blended. It will be a little clumpy. Spread in a thin layer onto a cookie sheet. Bake for 2 1/2 to 3 hours on 215 degrees. Let cool. Add chocolate chips and store.

We've had luck storing for about a month or so.
